It's time to take that beloved sandwich and give it a grown-up makeover. Say hello to the adult grilled cheese featuring maple bacon and (if you like) a hint of bourbon. Trust me, your taste buds are in for a treat!

INGREDIENTS

2 slices of bread (we use our homemade bread but sourdough works great!)

2 slices of sharp cheddar cheese

2 slices of provolone cheese

2 tbs of butter (separated)

1/2 lb of bacon - diced
-
1 small onion - diced
-
1/3 cup of brown sugar
-
1/4 cup of maple syrup
-
2 tsp of mayo (Optional)
-
1 oz of your favorite bourbon (we used Uncle Nearest)

INSTRUCTIONS

In a medium skillet, cook diced bacon until desired doneness (crispy is best)

Once bacon is done, add the diced onions and cook until they begin to caramelize

Add brown sugar, maple syrup and bourbon to pan

Reduce heat and continue to cook until mixture has thickened (approximately 15-20 minutes

While maple bacon cooks, prepare the rest of the recipe:

Spread butter on both slices of bread

(Optional - add 1/2 tsp of mayo to the buttered side of each slices - this helps make it crispier)

Layer the sandwich with 2 slices of cheese, the Maple Bacon and finish with 2 more slices of cheese​

Place your sandwich in the skillet and cook on each side for about 5-6 minutes on a low heat or until each side is a nice crispy golden brown.
