Pepperoni Pizza Eggrolls

When I was a kid, pizza was my absolute favorite meal. I could easily eat it every day for breakfast, lunch, or dinner—and let's be honest, probably at any time in between. And if I could’ve gotten away with it, I probably would’ve eaten pizza for every meal! There’s just something about the combo and satisfaction of that melty cheese pull, crispy edge pepperoni, (the crispy edge is a must)  and tangy sauce that has always felt like the ultimate comfort food. Unfortunately for my husband, even as an adult, my pizza obsession hasn’t faded not...one….bit.. and I could still eat it for every meal. However, I’m now always on the lookout for new, fun ways to enjoy it that fit a busy lifestyle or feels a bit more errr adultier? Enter: pepperoni pizza egg rolls.

These are a total game-changer for pizza lovers, and the best part? They’re quick, easy, and a little more on the "somewhat healthy" side than ordering delivery (though I’ll never say no to that either!). Imagine all the things you love about pizza rolled up into a crispy, handheld snack that’s perfect for on-the-go or as a fun family treat. The garlic butter topping adds an extra layer of deliciousness that makes these eggrolls seriously irresistible. I tested these little gems out during a recent Sunday Funday Football gathering and they were a huge hit! These are perfect for a quick bite, and because they’re so easy to make, they’ve quickly become one of my go-to snacks. The crispy, cheesy, pizza goodness wrapped up in a portable little eggroll? I’m sold. Trust me, once you try them, you’ll want to keep them in your weekly snack rotation too.

INGREDIENTS

  • Eggroll Wrappers

  • Turkey Pepperoni slices 

  • Pasta Sauce (We use Raos)

  • Frigo Light String Cheese

  • Avocado non stick oil spray 

  • Ranch For Dipping (we used our homemade healthy ranch dressing)​

  • Garlic butter for topping​​​​​​​​​

INSTRUCTIONS

  1. Preheat your air-fryer to 400°F 

  2. Place eggroll wrapper diagonal on a clean surface with one edge facing you and spread 1 Tbs of pasta sauce on top

  3. Add slices of pepperoni to sauce and top with string cheese stick

  4. Roll the wrapper tucking the sides in and sealing with light dabs of water

  5. Spray air-fryer with Avocado Non Stick oil and add eggrolls

  6. Lightly spray eggrolls with Avocado Non Stick oil and cook for 7 minutes or until golden brown

  7. Flip and cook for 7 more minutes or until golden brown

  8. Brush with garlic butter mixture and serve with Ranch dipping sauce on the side

Garlic Butter Topping:

  • Melt 2 Tbs of butter, 1 tsp of parsley and 1tsp of minced garlic

​

Healthy Ranch Dressing

Mix together the following:

  • 1 cup greek yogurt

  • 1 cup of Buttermilk

  • 1/4 tsp paprika

  • 1/2 tbs of dill

  • 1/2 tsp each of:

    • Parsley

    • Kosher Salt

    • Black Pepper

    • Onion Powder

    • Garlic Powde​r
